And in honor of his Irish roots,
Irish cheddar recipes.

Irish Cheddar and Chive Smashed Potatoes
Prep Time: Cook Time: Serves: 4-6
2 lbs. red potatoes, scrubbed
2 tsp. salt
2 Tbsp. Unsalted Butter
1/2 c. Milk, warmed
2/3 c. Irish Cheddar, shredded
1/4 c. chives or green onions, finely chopped
salt and fresh cracked pepper to taste

Cut potatoes into 2-inch chunks. Place in saucepan,
over with water and stir in 2 tsp. salt.
Bring to a boil over high heat, turn down to a simmer
and cook for 15 to 20 minutes, until the potatoes are tender.
Drain potatoes, return to saucepan.
Mash potatoes by hand to a coarse texture.
Turn heat to low, stir milk and butter.
Fold in cheese and chives and add salt and pepper to taste.

The rich yellow color in Tipperary Cheddar comes about as a result
of plentiful Beta Carotene in the milk, which develops in the rich,
fertile grasses that feed the cattle.
