Let's see . . . where do I start.
Three weeks ago I took the train to Chicago to get the computer
that son, Nate had put together for me.
We had a terrific visit and I now have a faster computer.
But we changed some programs and I can't get my picture off the camera yet.

Last week John and I went to help Todd, Sarah and Elle
get moved into their new apartment in Middleburg Heights near Cleveland.
It's a great place, though 5+ hours from me.
Elle's crawling!  And she has one tooth!

For a while I have been putting together a plan to open
a small Cheese Lady shop downtown at 197 Clay.
On Saturday the 24th of February those plans came crashing down,
my husband was fired.
Though politics, new ownership and not performance were the cause
the result is that for the first time in his life, we have no job.
It has been 10 days and after much soul-searching,
advise-seeking and research, we have made some decisions.
We took a long look at our lifestyle.
1) Time  2) Family and friends 3) Travel near and far
These things are our priorities. . . so the decisions to
open the shop, sell the house and move downtown seem logical.
Today we are listing the house
and plan to move into 297 Clay when the it sells.
We are still investigating the shop
but have not yet signed the papers.
Though The Cheese Lady would have her husband
to help her get the shop up and running!

I'm convinced that all of you will support me downtown!
I'll still be at the market.

CHEESE

I'm set pretty well on cheese all the way around.
We're coming up on St. Patty's Day
I'm stocked up on Irish cheeses.

Irish Cheddar - County Tipperary of Ireland is the idyllic setting
for the production of this delicious cheddar.
The land of Tipperary is renowned for it's dairy produce due
to the many green pastures, clear waters and the mild climate it enjoys.
Tipperary Cheese has a rich creamy texture, which just melts in your mouth.
It has a delicious sharp taste, which satisfies the appetite for a snack
whether on a cracker or a slice of bread.
The rich yellow color in Tipperary Cheddar comes about as a result
of plentiful Beta Carotene in the milk, which develops
in the rich, fertile grasses that feed the cattle.
Cahill Porter - The unique mosaic pattern of this Irish cheese is created
when a rich porter ale is blended with tangy Irish cheddar.
Made from the milk of a Friesian herd,
it's individually made using a vegetable rennet and no artificial ingredients.
Cashel Blue - Louis Grubb, Fethard, Tipperary
A medium-flavoured blue with a melt in the mouth creaminess,
this cheese is less salty than the majority of blues. Ireland's most famous cheese.
Coolea - Coolea is a type of cow's milk cheese that consists of a smooth,
Gouda-like texture with rich, sweet, caramelly flavours.
Like Gouda, Coolea cheese is covered in a thick,
solid wax rind which contributes to the cheese's flavour and texture.
It is made in Coolea, Ireland.
Daru - Darú is a beautifully balanced handcrafted farmstead cheese
with a natural rind and long finish.
It is a semi hard cheese made with pasteurised cow’s milk
from the herd of the Maher family in the heart of Tipperary
where the pastures are fresh and green.
Vegetarian rennet is used in the production of this cheese
and therefore it is suitable for vegetarians
as well as coeliacs and diabetics.
Cahill Porter with whiskey - Marion Cahill of Cahill's Farm
has developed an interesting range of flavored cheddars.
Using a base of tangy Irish cheddar, she has experimented
with a variety of flavors and has come up with some very popular combinations.
These semi-soft cheddars are made from pasteurized cow's milk and vegetable rennet.
